Made from inulin, a naturally occuring substance found in a large number of plants, such as dandelion, wild yam, Jerusalem artichoke, onion, agave and chicory. The natural inulin used in all natural SomerSweet® comes from chicory, creating a pre-biotic soluble fiber. This sweetener also includes, another natural substance found in pears, melons, grapes, mushrooms, wine and cheese. While categorized as sugar alcohol, erythritol has no gassy side effects. Additionally there is a small amount of fructose found in our inulin.

| Vanilla Cake |
INGREDIENTS
1/2 cup unsalted butter, at room temperature 1 cup of All Natural SomerSweet Baking Blend 1 1/2 cups of cake flour, sifted 1 1/2 teaspoons baking powder 1/2 teaspoon salt 2 large eggs 1/2 cup cream 1 teaspoon vanilla extract |
METHOD - Preheat oven to 350 degrees. Using a mixer, cream butter and All Natural SomerSweet together until light and fluffy, about 3 minutes. Add the eggs, one at a time, making sure the first is well incorporated before adding the next.
- In a separate bowl, sift together all dry ingredients.
- Combine the cream and vanilla. Add 1/3 of the cream to the butter mixture, then 1/3 of the dry ingredients. Continue alternating the wet and dry ingredients, blending until incorporated and smooth.
- Pour into the prepared cake pan.
- Bake for 30 minutes or until a toothpick inserted in the center of each cake comes out clean.
- Let cool in the pan for 10 minutes. Remove from pan and cool on rack for at least 1 hour before frosting.

INGREDIENTS
1 envelope unflavoured gelatin 2 tablespoons water 2 cups heavy cream 1 teaspoon vanilla extract 2/3 cups All Natural SomerSweet Baking Blend |
METHOD - Place water in a small microwave-safe bowl. Sprinkle the gelatin over water and let bloom for 2 minutes. Microwave on high for 15 seconds to dissolve. Let rest until cool enough to the touch.
- In a clean, medium-size chilled bowl, whip the heavy cream with an electric mixer until soft peaks form.
- Add the vanilla, then gradually add the All Natural SomerSweet, Add the cooled gelatin and whip until stiff and creamy, the consistency of frosting.
