About Silicone
Food-grade silicone has quickly risen in popularity in kitchens everywhere and it's no surprise why. Kasie Savage's Grilled Veggie and Goat Cheese Panini
Yield: 4 Sandwiches
Shopping list and prep:
2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
pinch of salt and pepper
1 medium eggplant, cut lengthwise into 8 slices (1/4 inch each)
1 medium zucchini, cut into 8 slices (1/4 inch each)
1 red bell pepper, cored, seeded and quartered
8 ciabatta buns, cut in half
1/2 cup soft goat cheese
8 large fresh basil leaves
Simple Steps:
1. Whisk vinegar, oil, salt and pepper in a bowl.
2. Preheat grill pan in the microwave according to product directions.
3. Place 1/4 of the vegetables inside the Microwave Grill Pan and coat with 1/4 of the vinegar mixture.
4. Place Press Lid on top and microwave for 3-4 minutes under veggies are tender-soft.
5. Lightly brush inside of ciabatta bun with a bit of vinegar mixture.
6. Empty veggies from the Grill Pan onto a bun and add 1/4 of the goat cheese and basil.
7. Close sandwich, put back into still warm Grill Pan, replace Press Lid and microwave for an additional 2-3 minutes until bun is crispy on the outside and cheese is ooey-gooey!
8. Serve. Enjoy. Repeat 3 more times to serve 4.
